Guacamole with a Kick
Mexican food is probably one of my favorite foods and guacamole is a MUST to accompany any Mexican food or just as a snack. Full disclosure…this recipe will make you think you can eat all the guacamole you want. Truth is, you can have too much of a good thing, so, as in everything else, moderation is key.
2 ripe avocados
1 small diced jalapeño, with or without seeds depending on how heat tolerant you are
1-2 T red onion, diced
1 t ground cumin
1 garlic clove, minced
1-2 T cilantro, depending on how much you love cilantr
juice from 1/2 a lime
salt to taste, about 1/2 t
Mash all ingredients in a bowl with a fork, or grind in a large mortar and pestle, keeping it as chunky or as creamy as you like. Taste test with a chip or two and add more salt, as needed.
