Grilled Salmon with Chipotle Butter
One of our favorite salmon recipes is so very simple it’s ridiculous how yummy it is. We pick up a salmon (no skin) from Costco, cut it into individual servings, rub extra-virgin olive oil on, sprinkle with salt and pepper and throw them on the grill. Meanwhile, soften some butter, chop up some canned chipotle chilies (seeds removed, leave some sauce on), mince a clove of garlic and mix it up with the butter and a bit of salt. Presto, change-o, dinner is served. Add a side salad or yummy rice or quinoa dish for a complete meal. Pairs nicely with a chilled, dry rosè.
Salmon with Chipotle Butter
6 tablespoons unsalted butter, softened
2-3 canned chipotle chilies in adobo sauce, seeded and minced, leave some of the sauce on
1 teaspoon garlic, minced
kosher salt to taste
4 salmon fillets (we get the fresh salmon from Costco without the skin)
Extra-virgin olive oil
Lime wedges
In a small bowl, soften the butter and combine with chipotle peppers, garlic and ½ t salt.
Rub salmon with olive oil and sprinkle with fresh ground salt and pepper.
Prepare grill for direct cooking over high heat (450° -550° ). Cook salmon with the lid closed as much as possible 6 -8 min, Turn over and cook fillets 3 min, to your desired doneness.
Serve warm topped with chipotle butter and a lime wedge.
