Fruity, Peanut Buttery Smoothie

As the temperatures heat up, I’ve become obsessed with smoothies, actual healthy ones! I’ve become so obsessed that I even had one for lunch today.

I didn’t have all the ingredients for the one I wanted to try, so I improvised. You can too!

This makes 2 smoothies.

Fruity, Peanut Buttery Smoothie

1 c unsweetened coconut milk, like So Delicious (or sub almond milk or any other milk)
1 c baby kale leaves
1 banana, peeled and frozen
½ c fresh or frozen blueberries
1 c frozen strawberries, mango, papaya, pineapple
2-3 Tbsp peanut butter
1  Tbsp chia seeds

Combine all ingredients in a high-speed blender, and blend on the highest speed until smooth. Add more milk if it gets too thick. Don’t worry, the color will change from a putrid green to what looks like a chocolate milk shake…I promise!
